Yummy Stuff

Comfort food for the cooler fall days: Vegetarian Chili !


What you will need

  • 3 tbsp. olive oil
  • 5-8 garlic cloves
  • 3 small onions
  • 3 carrots
  • 2 green peppers
  • 1 can of puree tomatoes
  • 1 can of corn
  • 1 can of lentils
  • 1 can of kidney beans (or other)
  • 1 tbsp. brown sugar or honey
  • 3 tbsp. of flour
  • 2 tsp. chili powder
  • 2 tsp. cumin
  • 3-4 tsp. paprika
  • 1 tsp. oregano
  • salt & pepper to taste
  • water


  • Heat oil in large saucepan over moderate heat
  • Add chopped onions and cook for 3-4min. or until translucent
  • Add garlic and diced carrots, and cook for another 5 min.
  • Add green peppers and saute mixture while stirring occasionally (about 10-15min. or until veggies are tender)
  • Add puree tomatoes and 2 1/2 cups of water
  • Mix in sugar, cumin, chili powder, paprika and oregano
  • Bring to a boil
  • Add beans, corn, and lentils to pot
  • dissolve flour in half a coup of water and add solution to pot while stirring
  • Add salt and pepper to taste
  • Set to low heat and let it cook for an addition 20-30min. while stirring occasionally (add a little water if too thick)

Enjoy with grilled toast 🙂
